Storing and using pumpkin without waste

Pumpkin is the star of autumn, but a leftover piece often sits around until it turns soft. With a few simple habits you can use the whole pumpkin and throw almost nothing away.

Whole pumpkin? Here's how it keeps longest

A whole, undamaged pumpkin does not need the fridge. It actually keeps well in a cool, dark and dry spot, like a pantry or a not too warm utility room.

Place the pumpkin with the stem pointing up and leave some space between several pumpkins so they do not press together. Most hard autumn pumpkins stay good for weeks this way.

Cut pumpkin

Already cut your pumpkin? Wrap the rest well and keep it in the fridge. Using it within a few days gives the best result.

See a small soft or discoloured spot on the cut surface? Cut it generously away and use the rest. Throwing out a whole pumpkin over one spot is a shame.

Use the seeds and skin too

You can use almost all of a pumpkin. Rinse the seeds, pat them dry and roast them into a crunchy snack or topping for soup and salad.

The skin of most orange autumn pumpkins becomes soft and edible after roasting or boiling, so you do not always need to peel. Not sure? Taste a piece after cooking.

Too much cooked pumpkin? Freeze it

Cooked pumpkin freezes well, as a puree or in cubes. Divide it into portions you use in one go, so later you only take what you need.

That way you always have a base ready for soup, a bake or a pasta sauce, without anything spoiling on the counter.

Save even more with YumBite

Does a greengrocer or food shop have pumpkin or other seasonal vegetables left at the end of the day? It might appear as a surprise in a YumBox. The partner puts the box together from what is left that day, and you collect it at a discount by swiping in the app at the counter.

This way you not only save the pumpkin in your own kitchen, but also help prevent good food being thrown away elsewhere.
